I think I finally am in touch with my Paula Deen side ya’ll! I wanted something different/ original tonight and got just that. Normally I’m all about trying something new on the grill but today I felt was an oven day. I had a lot to do this afternoon and needed the freedom that comes with throwing something in the oven on a timer. The gears in my head started turning. I knew I wanted chicken but didn’t know how I wanted to make it. I think my taste buds were in overdrive because I just started grabbing random stuff and setting it out to use. So here’s what I came up with.
Looks pretty good, right?! You should have smelled it cooking. I wanted to dig in before it was fully done.
So here’s what you need if you want to try this yourself:
- 3 Chicken breasts
- 4oz Sour Cream
- 1 Can Cream of Chicken & Mushroom soup
- 1 tsp Lawry’s seasoning salt
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tsp Sea Salt
- 1 tsp Black Pepper
- 1/2 pk Ritz Crackers broken up (I like to take the crackers and put them into a bag then smash them until there are no big pieces left)
- 1/4 cup shredded Mozzarella Cheese
- 1/4 cup shredded Cheddar Cheese
Pre-heat your oven on 375 degrees. While the oven is preheating mix together all the ingredients except the chicken and two cheeses in a medium size bowl. Once everything is mixed together well, pour it into a 9×9 pan. Smooth it out so it covers the bottom of the pan. Then take a small bowl and melt about 2 tsp of butter in it. Take each chicken breast and dip it in the butter then put it in the bag with the crackers and shake it until the chicken is covered completely. Take the chicken out of the bag and place it in the pan on top of the mixture. Repeat this same process for the next two chicken breasts. After all 3 are in the pan, sprinkle the cheese on top of them.
This is what it should look like before you put it in the oven.
Place it in the oven for an hour and enjoy doing other things while it cooks. 🙂

What’s an original recipe you came up with on a whim? What’s your go to meat? Mine has always been chicken. I feel like I could make anything with chicken and it would taste good. Don’t you think that’s true?!

June 10, 2014 at 10:10 amHey Alexis! Great question! How long I leave it in depends on the size of the chicken. For tenders and small breasts I usually leave it 40-45 mins. For larger breasts it’s normally 50 mins to an hour. If you’re unsure how long to leave your pieces, I would just pull the pan out of the oven and check them with a thermometer around the 40 min mark. That way you can gauge about how much more time you need to leave them in there to cook. 🙂
