How was your Valentine’s Day? Did you do anything special? I spent mine with Braxton and made him his favorite dish…Cheesy Potatoes! His face lit up when he saw what I was making and you would have thought he was just given free reign at the candy store.
It turned out so good, I wanted to share the recipe with all of you. 🙂
You’ll need:
1 can of Cream of Mushroom Soup
2 large size Potatoes
1 bag of real bacon bits
2 tablespoons of Butter
3 – 1/2 inch slices of Velveeta Cheese
Pre-heat your oven to 375 degrees. While it’s heating up, peel and cut up your potatoes into small cubes. Add those to a bowl that is oven safe. Then add in the can of mushroom soup, butter, and bacon bits. Also, fill 1/3 of the soup can with water and add that to the bowl. Your bowl should look similar to the image below.
Cover the bowl with a lid and put it in the oven for about 30-40 minutes. Occasionally, pull it out and stir it so nothing sticks to the bottom or sides. Once the potatoes start to get soft, start mashing them with a potato masher. I like mine to be as close to mashed potatoes as possible but this is where you can decide how you want yours. After its at the consistency you want it to be, add your velveeta slices on top and stick it back in the oven for the cheese to melt. Once the cheese is melted (normally takes about 5 minutes) pull it out and stir it up.
Wah-la! Here’s what mine turned out looking like. Note though, Braxton likes EXTRA cheese in his so mine has a lot more than what the recipe calls for.
