Breakfast for Dinner…You betcha!

Breakfast Pizza

Yesterday was a full day of activities for me and cooking a nice good meal was out of the question. I needed to cook something simple and easy. It also had to be something that could be cooked quickly since Braxton and I were getting home later than normal. So what did we choose to have….BREAKFAST PIZZA!! Yummmm!!!

I learned about this recipe when I was searching Allrecipes.com. Have you ever checked out that site? OMG , they have tons of awesome recipes for just about everything imaginable.  The normal recipe actually calls for hashbrowns but I opt’d to leave those out this time and add in something different.

Ingredients:

2 cans of crescent rolls

1 bag of shredded Mozzarella cheese

1 bag of shredded sharp cheddar cheese

1 lb of sausage ( I prefer Neece’s sage sausage)

4 eggs

1 bag of bacon bits

Pre-heat your oven to 375 degrees. Then I cook the sausage and while it’s cooking begin mashing it into small pieces. Take the crescent rolls and roll them out and press them together with the edges up a little on the pan. I use a 9×13 in pan.

Then in a small bowl add your 4 eggs and stir them up like your about to make scrambled eggs. Aren’t you loving these directions..I could be the next Paula Dean huh?!…not!

Pour the eggs evenly into the pan. Then sprinkle the bacon bits on top of the eggs across the entire pan. After your sausage is done cooking, drain out the grease and add it evenly across the pan. Once all that is on there you are ready to add your cheese. I like to add the Mozzarella cheese first. Sprinkle it on top of everything. You can use as much or as little as you like. Than sprinkle the cheddar cheese on top of that. After all that is in the pan, I’ll then sprinkle a little salt and pepper over the whole thing. Here’s what it should look like before it goes in the oven.

Now you’re ready to put it in the oven. Why is it “patty cake patty cake, bakers man” is now constantly replaying in my mind? I feel like I should stop typing and start clapping.

Anyway, once it’s in the oven it will need about 20-25 minutes to cook. The bread will be a golden color when it’s finished and you should be able to stick a fork in it and when you pull it out nothing be left on it.

Wah-la! There ya have it. I promise if you love all the ingredients we used, you will most definitely love this meal! It’s a favorite at my house and boy is it so simple and quick to fix.

Aside from my great dinner last night, I was caught in a candid camera moment that I thought would give you some great laughs.

Yes, those are plastic bags on my feet! I accidentally forgot about my muck boots being outside in the rain and by the time I got home they were soaking wet. I think I dumped an entire bucket of water out of them. So I had to improvise and just put plastic bags over my tennis shoes. I thought this was quite a clever idea..that is until I took the bags off and realized they tore while I was walking and mudd still got on my shoes. ::sigh::

Anyway, TGIF!! In just a few hours it’s going to be 5 o’clock somewhere and this cowgirl is off to SEBRA Bulls and Barrels for some fun times. 🙂 Do you have any fun plans for tonight?
